Hot Sauce Version 1
Made with surplus chillies, used to make a custom gin and an in-house made Sangiovese red wine vinegar.
When making a custom Gin for our good friends at Rita's, we macerate beautiful Mexican chillies in alcohol for distilling. After this process, the leftover chillies would be waste. But we don't like waste so we made some red wine vinegar and made this mild, vinegar forward hot sauce. It's fruity and acidic, perfect on eggs in the morning or as a marinade for veggies or chicken.
Ingredients: Morita and Guajillo Chilli, House Vinegar (grape), Distilled Malt Vinegar (Barley), Salt, Sugar, Onion, Xantham Gum
